I love weekends, but not for the same reasons I did when I was single. Back in those days, weekends meant partying at bars, hooking up, and generally risking getting myself in a lot of trouble. Now that I’m married and settled down into a responsible lifestyle, my favorite thing to do on weekends is just relax with my husband and my fur kids…and make brunch!!
I don’t normally eat breakfast food because I hate mornings and never feel like eating that early in the day. Breakfast food eaten later in the day with a mimosa in hand, however, is awesome!
So today, I made scrambled eggs with lactose-free cheddar cheese, maple syrup-infused sausage links, and fried potatoes. Delicious! Oh, and mimosas! Definitely so many mimosas.
My dogs thought they were getting brunch too as they stared at me cooking in my kitchen, but they were sadly mistaken. Don’t worry though, they’re far from starving. They just like to act like they’re starving whenever there’s food around and guilt me with the sad puppy dog eyes.
Brunch is one of the best meals to cook at home too, because the ingredients are so cheap and it really doesn’t take a lot of effort. Restaurants make tons of money on brunch from people who don’t feel like putting in the effort to make it themselves. Not this girl!
