We Made It To The Weekend; Fuck It, Let’s Eat Lots Of Carbs!!

It’s been a long week, and I’ve been very good about eating less carbs, but now it’s the weekend so fuck it! Let’s cut loose a little! For our Friday night weekend kickoff, I made penne with mini meatballs and a side of Italian herb and Parmesan bread. I’ll be perfectly honest here; I’m very good at making meatballs from scratch, but I didn’t this time because I didn’t feel like going to the store and the frozen kind were available for delivery on Amazon Prime Now. Groceries delivered? Fuck yeah. So there’s not much awe involved in boiling pasta and heating up frozen meatballs in sauce.

What I really want to talk about is the bread. I was having a massive carb craving and wanted some kind of awesome bread, but all I had was leftover hamburger buns. Thankfully, I grew up in a poor household in the Midwest, so I have no scope or parameters for different types of bread being “inappropriate” for certain uses. Where I come from, hot dogs and hamburgers can both be eaten on regular sandwich bread if that’s all you have…and if you have leftover buns, they can be used for literally any bread-centric recipe. So I coated those halves of hamburger buns with butter on both sides, sprinkled them with Italian herbs and Parmesan cheese, and baked them at 350 degrees for about 10 minutes. That bread was awesome! There’s nothing like dunking some decadent buttery warm crispy bread into the extra pasta sauce. It was the best idea I’ve had since agreeing to marry my husband. That concept is a keeper! Oh, and so is the husband. 😉

So there you go! Great use for leftover buns! Go forth and enjoy your carbs, and have a great weekend!

  1. But seriously though why is it that people aren’t as resourceful as midwesterners? I always use buns when I don’t have bread! Next time I will have to use Parmesan with it though

  3. Probably because it’s a poor area and we grow up with less money than a lot of people, so we learn early how to be thrifty. Everyone I know from up there is like me in that respect, while people down here in the expensive cities throw money around like it’s nothing to impress people. It makes me roll my eyes.

  4. Yes! It was so bad in Memphis! It’s funny Chicago is a big city and I still notice people there are resourceful…probably because it is very expensive but I like to think that it’s Midwest lol
